Chicken Noodles Soup


This is our family favorite recipe. And it's very simple if we need to serve a quick dinner.

Here's the recipe of Chicken Noodle Soup.

Ingredients:
0.5lbs of chicken breast
2 eggs
400 gm lo mein or hokkien noodles
2 tbsp vegetable oil
2 garlic cloves, crushed
5 pieces candle nuts, crushed
0.5lbs Shanghai Bokchoy, cutted
Sea Salt
Sugar
Chinese Celery leaves
Tomatoes, cutted
Fried, sliced shallots.

Methods:
1.Boil the breast chicken with 1000cc water, cook until it becomes tender and drain it well. Set aside and shred it. Reserv +/-500cc chicken broth water.

2. Place the noodles in a large bowl, pour very hot water over the top and soak, separating a little with tongs. Then drain well and set aside.

3. At the same time, heat the oil in a wok or non-stick frypan and gently sauté the crushed garlic cloves and crushed candle nuts.

4. Add eggs and scramble it, then chicken broth water, the noodles, shanghai bokcoy and the shredded chicken. Pour the sea salt and sugar, taste it.

5. Serve with a cutted tomatoes, chinese celery leaves, and good pinch of shallots sprinkled on top.
